Apple Caramel Porridge (gluten-free & vegan)

Ingredients

For the porridge

  • 2 cup gluten-free oats
  • dash of salt
  • dash of cinnamon
  • 1/2 tsp vanilla
  • 3 tbsp maple syrup
  • 1 cup vegan milk such as almonds, soy or cashew
  • 1 cup coconut milk from a can

for the apples

  • 2-3 apples
  • dash of salt
  • dash of cinnamon
  • 1 tsp lemon juice

for the caramel

  • 1/4 cup cashew butter
  • 1 tbsp vegan butter or coconut oil melted
  • dash of salt
  • 1/2 tsp vanilla
  • 3 tbsp maple syrup

Instructions

For the apples

  1. 1. Start with peeling and chopping the apples. Put them in a small saucepan and add the rest of the apple compote ingredients. 

    2. Bring to medium heat and let them simmer. Stir from time to time until apples have released their juices and are soft. Approx. 5-10 min.

For the caramel

  1. 1. Mix all ingredients together in a small bowl. Stir until everything is combined. Add more salt if you are going for salted caramel. Set aside.

For the porridge

  1. 1. Add all porridge ingredients in a small saucepan. Bring to medium heat and stir continuously until oats are soft. Approx. 5-10 min.

    2. Move porridge into bowls and top with apple compote and caramel. Enjoy!
